Perpetual - Barrel Aged Raspberry Sour

The second iteration of Perpetual, our spontaneously fermented barrel aged sour beer, finished on raspberries. For this beer, we selected two barrels of spontaneously fermented (Méthode Traditionnelle) beer from the 2020 and 2022 seasons. We then let this blend re-ferment with 400g/L raspberries for a further 10 months.
