Time - Gueuze Style Blend

Our interpretation of a Belgian style Gueuze. A blend of 1, 2 and 3 year old barrels of spontaneously fermented beer. Usually for modern style brewing, brewers will 'pitch' a selected yeast strain into the cooled wort to control the final beer profile. For spontaneous brewing we do not pitch any yeast or culture, instead we rely on whatever microbes are floating around in the air on brew day and allow these to inoculate the wort as it cools overnight in the cool ship. The result is somewhat unpredictable but always complex and interesting. We can then control the final product by selecting multiple barrels to present a finished product that is complex but balanced and refreshing.
